What is Ispabok?

Ispabok is available at Café Bueno, a family-run restaurant that serves coffee and comfort food. 

Ispabok is a combination of spaghetti and palabok, a local delicacy that may be found in Orani, Bataan. Spaghetti noodles are flavored with our secret palabok sauce, topped with chicharon other delectable meat and vegetables. The result is a truly ingenuous Filipino dish, one that now finds itself delighting curious eaters and hungry families in Taytay, Rizal.

The family restaurant was founded by the spouses Renato and Olivia Bueno, who knew that ispabok was ripe for discovery beyond Orani. In the province, ispabok was a dish served to Olivia by her ima (auntie) whenever she visited from the city. When Olivia married Rene, ima served the ispabok to him as well, and would continue to do so, until both looked forward to the sumptuous feasts ima served everytime they came back: burong isda, alimango, hipon, kare-kare, and many more. It is from ima’s generous spirit and wonderful cooking where ispabok takes inspiration.
